Gastronomy literally means the science and culture of preparing, distributing and consuming food.
Food has always been one of the basic and basic needs of mankind since the beginning of creation and will be until the end, and of course, businesses related to the food industry are always stable and continuous. This is one of the reasons for the public interest and acceptance of the restaurant and coffee shop business all over the world. Food is the main source of energy and nutrition in humans, and the study of food is called the science of gastronomy. In the past, food was obtained through animal husbandry, fishing, hunting, etc. Each of these methods was important in a specific area. The invention of fire caused a change and evolution in the style of food. The food industry has developed greatly over time, especially in the last decade and in colonial societies, and as a result, production, preparation, preparation instructions, trade, health, dietary habits, etc. have undergone huge and widespread changes. On the other hand, due to various types of connections, different nations have become familiar with food culture and we are facing the expansion of the food and tourism industry.
Today, eating is considered a family and friendly pastime. Considering the eating habits and food diversity in different cultures and even the type of cooking and serving food in different countries, such as cooking food at the customer’s table, an industry called food tourism has been created. Considering the increasing speed of life, changing social and cultural lifestyles, and the development of industry, naturally, the method of preparing, producing, and consuming food has also undergone fundamental and infrastructural changes.

✅Gastronomy is an interdisciplinary science (technical – food – management), and at the same time deals with diverse and heterogeneous topics, which are broadly divided into the following axes:
Human resources, management and the basics of organizational and personnel structure, finance and legal
The field of branding, marketing, franchising
Safety and health, ceremonies and catering
Various food styles, menus, principles and basics of industrial cooking, menus, their production and distribution processes and maintenance
Industrial machinery and equipment and industrial kitchen design, interior decoration and salon, structural and installation sector
❇️ The position of food and the food tourism industry and the attractiveness of Iranian food inside and outside the country on the one hand, and the extensive and significant growth of this industry, especially in the last decade at the national level, on the other hand, have necessitated the necessity of equipping business owners in the food industry and the restaurant industry with up-to-date knowledge and expertise, and the challenge of this issue worldwide is the interdisciplinary and heterogeneous nature of this sector. The need for a specialized course that can provide all the essential needs of managers, industry owners, and investors in a unified and comprehensive manner to applicants and activists in the gastronomy sector.
After extensive studies at the domestic and international levels on important issues related to the gastronomy industry and detailed and comprehensive investigations with the help of organizations, institutions, associations, and unions related to these professions in the country, a very successful course titled “MBA Gastronomy Tourism Entrepreneurship” was designed and planned for the first time in Iran, considering the needs of the country’s market and food industry.

The MBA Gastronomy Tourism Entrepreneurship course provides the following technical and specialized content to interested parties and audiences:

  • Fundamentals and principles of tourism management
  • Management and operation in the restaurant industry
  • Management of food and restaurant businesses
  • Principles of starting a restaurant, fast food, coffee shop, hall
  • Increasing sales and developing the food and restaurant industry business

  • Principles and principles of franchising and signboard assignment
  • Creating a service quality system and standardizing it
  • How and how to increase the number of branches domestically and internationally

  • Principles and basics of industrial cooking, menu and recipe card, garnish, plus quantity

  • Principles and basics of industrial kitchen design in three scales: small, medium and large.
  • Technical-engineering basics including: architecture, interior decoration, structure and facilities.
  • Workplace safety and hygiene of raw materials, personnel, environment and work tools.
  • Procedures and catering, various catering methods and systems, industrial cooking, etc.

✳️This course has been designed and planned by prominent and reputable domestic professors and in consultation with international experts at the most prestigious university in Iran (University of Tehran).

This course is offered for 250 hours and in a non-attendance manner over a period of six months, one day a week, by prominent and renowned Iranian professors, and it well meets the scientific and practical needs of managers, activists, enthusiasts, investors, and audiences in the food, beverage, tourism industry, and all those interested in starting new businesses. At the end of the course, participants who have successfully completed the course will be presented with a certificate and diploma from the most prestigious domestic MBA course with international accreditation and translatability.

According to experts’ predictions, with the end of the Corona era and the strong need of people to benefit from food and tourism services, a suitable opportunity will be provided for the growth and prosperity of the restaurant industry.   • This course is held over a period of one year (four consecutive semesters).
